Here are a few recipes for you to enjoy on National Blueberry Pancake Day.
Vanilla Blueberry Pancakes
Recipe makes approximately 4 pancakes.
Per serving (4 pancakes): Calories 249, Protein 37g, Total Fat 3g, Carbohydrates 21g, Fiber 1g.
Ingredients:
- 1 Packet CarbEssentials Vanilla Pudding/Shake Mix
- 1 Packet HealthyWeight Golden Delicious Pancake Mix
- 1/8 Teaspoon Cinnamon
- 1/4 Cup Egg Whites
- 1/3 Cup Fresh or Frozen Blueberries
- I Cup Water
Instructions:

In a mixing bowl, combine the pudding and pancake mixes; add egg whites, blueberries (thaw first if frozen) and water; stir until combined.

Coat a pan with nonstick cooking spray and place over medium-high heat.

Spoon 1/4 of the batter into pan, cook until slightly browned then flip to cook the other side. Repeat with rest of batter.

Ingredients:
- 1 1/2 scoops Quest® Vanilla Milkshake Protein Powder
- 2 tablespoons Brown Rice Powder/Flour
- 1 egg
- 3 tablespoons liquid egg whites
- 1⁄4 cup unsweetened almond milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1⁄4 cup zero-calorie sweetener
- 1⁄4 teaspoon kosher salt
- 1⁄4 cup fresh blueberries
- Nonstick cooking spray
Instructions:
- In a medium bowl, whisk together egg, egg whites, almond milk, baking powder, and vanilla extract.
- Mix in Quest Protein Powder™, Brown Rice Powder/Flour, sweetener, and salt.
- Fold in blueberries.
- Coat a griddle with cooking spray and heat to 300°F, or coat a large nonstick sauté pan with cooking spray and heat over low-medium.
- Scoop 2 tablespoons of batter onto griddle per pancake.
- Cook pancakes on each side for 2 to 3 minutes, or until lightly golden brown, and serve.
